It's not every day you hear someone from Iowa, the corn state, say they haven't had corn on the cob in a long time. But when my mother-in-law, who recently celebrated her 80th birthday, mentioned just that, I knew I had to do something about it. After all, how can you disappoint someone who lives in the heartland of corn?
I set out to make her corn-on-the-cob dreams come true. However, in my enthusiasm, I may have gone a tad overboard, leaving us with more corn than we could handle. That's when I decided to transform the remaining end-of-season corn into something equally delightful - a Corn Dip that pairs perfectly with my favorite Sumac + Thyme Nordic Crisps.
Why Greek Yogurt Over Sour Cream?

Ingredients:

  • 1/4 cup Mayonnaise
